Saturday mornings, the sun is shining through the window and as you lie in bed you can’t help thinking to yourself, “Pancakes would be nice.”

Monday mornings, and even though you need to get out of bed and start the day the same thought can’t help but pop back into your head, “Pancakes would be nice!” But rushed for time and trying your best to eat healthy, can you really justify pancakes for the second time in three days? 

Yes – with these pancakes, you can. 

For the health-conscious individual these pancakes are perfect. With no carbohydrates and just egg and banana acting as the base ingredients they are a delicious, high energy, high protein way to start your day. Not only are they quick and easy to make but they are sweet, fluffy and delicious as well, with a zesty tang.   

A single batch can be made in the space of 10 minutes and eaten in much less. 

Orange, banana pancakes 

serves 1



1 Banana

2 Free range eggs

1 Tbsp of desiccated coconut

½ Tsp of baking powder

Zest of ½ an orange

To serve  


Frozen berries

Orange zest

Flaked almonds

Mash the banana in a medium sized bowl until it reaches a smooth liquid consistency. Add in the eggs one at a time, whisking until fully incorporated.  

Stir in the coconut, orange zest and baking powder. 

Place a large non-stick frying pan on medium heat and grease lightly with butter.  

Pour an ⅛ of a cup of the mixture onto the pan in the shape of a small circle, you should be able to cook at least 2 pancakes at once. When the top is covered in small bubbles, gently use a spatula to turn the pancake over. The pancakes should be golden brown on both sides.  

Drizzle with honey and top with frozen berries, flaked almonds and orange zest.  

Serve warm and enjoy. 

[KEY: 1 Tbsp – tablespoon = 18ml; 1 Tsp – teaspoon = 6 ml]
